Description
Soil: Limestone soil with a lot of clay and a lot of stone, well permeable.
Vinification: Short cold maceration, “Pigage” twice a day during fermentation for better extraction. Aging in toasted French oak barrels for about 18 months, 30% new barrels. Filled without filtration.
