Description
Brown mixed with oolite stones rich in iron oxides, very well drained.
100% destemmed, five days of cold maceration, two “pigeage” a day at the start of the alcoholic fermentation, then pump-overs during maceration for a gentle extraction about 21 days. Aging is in oak barrels about 18 months.
Alk 13,5% vol.
