Description
After 12 h pre-fermentation maceration, the wine is fermented in a temperature-controlled stainless steel tank for 10 – 12 days at 15 – 17° C and fermentation is finished in a barrel.
The wine is aged in French oak for 10 months. Bottle aging minimum for one year.
Wine analysis: Alcohol 12.5%, pH 3.32, TA 6.3 g/l, residual sugar: 1 g/l.
Fruit aromas consist of apple, pear, and quince, with a hint of tropical note, most certainly coming from Morava grape. Milky structure, Ergo white really coats your palate with a thin layer of butter, quince, and honey which grows into a pleasant finish with pronounced length.
